Physical Health

Here are a few items that I am using to help improve my physical health. I will also try to share some recipes as I find them. I have Celiac Disease, if you don't know me, so have to be strictly Gluten free. I know it can be hard to find tasty GF dishes and brands!

Gluten Free Lasagna
I have made this lasagna a couple of times, both before and after my Celiac diagnosis. It's absolutely delicious but I've obviously had to make a couple of adjustments to make it Gluten free. You can see me make it here: https://youtu.be/4DAHFaO52kE

  • 1 Lb Sweet Italian Sausage

  • 3/4 Lb Lean Ground Beef

  • 1/2 Cup Minced Onion

  • 2 Cloves Garlic, Crushed

  • 2 (6.5 oz) Can Tomato Paste

  • 1/2 Cup Water

  • 2 Tbs White Sugar

  • 4 Tsp Chopped Parsley, Divided

  • 1 1/2 tsp Salt, Divided (or to taste)

  • 1 Tsp Italian Seasoning

  • 1/2 Tsp Fennel Seeds

  • 1 Tsp Ground Black Pepper

  • 12 Lasagna Noodles

  • 1 Egg

  • 3/4 Pound Mozzarella Cheese

  • 3/4 Cup Grated Parmesan Cheese

  1. Preheat oven to 375°F (190°C)

  2. Cook sausage, ground beef, onion and garlic in a Dutch oven over medium heat until well browed. Stir in tomato paste and water. Season with sugar, 2 tbs parsley, basil, 1 tsp salt, Italian seasoning, fennel seeds and pepper. Simmer, covered, for about 15 minutes, stirring occasionally. (Note on my version - I don't use the crushed tomatoes so I only simmer for about 15 minutes - the reason it needs to cook for so long in the original recipe is to tenderize the tomatoes so if you aren't using them it won't need to cook as long.)

  3. If you are not using pre-cooked noodles: Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 8-10 minutes. Drain and rinse in cold water.

  4. In a mixing bowl, combine ricotta cheese with egg, remaining 2 tbs parsley and 1/2 tsp salt.

  5. To assemble: Spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over the meat sauce. Spread 1/2 of the ricotta cheese mixture over the noodles then top with 1/3 of the mozzarella and parmesans cheese. Repeat layers and top with remaining mozzarella and parmesan cheese. 

  6. Cover with foil and bake for 25 minutes. (Tip - Spray the underside of the foil with cooking spry to prevent it sticking to the cheese before covering) 

  7. Remove foil and bake for another 25 minutes until golden brown.

  8. Allow to cool for about 15 minutes before serving.
